Potato and Leek Soup

Classic winter warmer, so fast and easy to make!
Ingredients:
1 onion
2 garlic cloves
1 leek (white part only)
3 large potatoes
750ml stock (vege or chicken or bone broth)
1/2 cup cream (or milk)

Method:
1.Chop onion, garlic & leek then sauté in a saucepan in oil (and/or butter) for a few minutes
2.Add diced potato & stock, simmer for 20 minutes
3.Add cream or milk and blend
Serving options…
On the top - truffle oil / bacon bits / chilli / cayenne powder / nutritional yeast / black pepper / chives / croutons…..
On the side – parmesan pesto toast / toasted wraps / rocket & parmesan salad / hot bread rolls / green beans fried with almond flakes and butter....
I love toasted wraps made with Mountain Bread, homemade almond pesto, parmesan and roasted vegies.
